  1. So glad I came across your blog! I am excited to try many of your recipes… My husband and mother-in-law are celiacs and I support them by eating a gluten free diet with them.. It’s made such a positive difference in all of our lives. I love to cook and try new recipes; kind of a hobby of mine.

Oh! and we are almost neighbors! I am in Sweetwater, TN. I look forward to all of your posts!!!
    Best Healthy Wishes,
    -Kristy

  2. Your gluten free chicken pot pie recipe is awesome! You are right, the crust is so flakey. My whole family loved it. My daughter has celiac and chicken pot pie is a favorite.

I have left over filling and going to try to freeze it.

Thank you for sharing!! As a mom of a celiac child, I am glad when something finally taste normal.

    Thank you!

    • Judith –

So glad you liked it! I love pot pie – especially in the winter. It’s a good cold weather food. The filling should freeze just fine. Of course, I could just eat the filling right out of the pan by itself.

  3. Karen!

I would love to be added to your list of gluten free blogs!
Today, I just started a list on my site of active and accurate GF bloggers, and I will add you.

    Thank you,
    Mike

  4. Dear Karen,

I am writing to inform you of our new Gluten free menu. About 4 yrs ago my sister Christine and I opened nebo restaurant at 90 N. Washington St. in Boston’s North End. Nebo is a traditional Italian restaurant offering dishes based on recipes that were passed down from our mother and grandmother. After being open for about a year, two of our closest friends were told they had Celiac disease. We then realized just how many people this disease has affected and the need for an alternative for their dining restrictions. Determined to serve our friends their favorites, we set upon making our menu available in a gluten free form. We are thrilled to say that we have now produced 90% of our menu with the same great taste as our regular menu. We don’t think there has been an accomplishment that has brought us more pleasure. If you would like us to forward a copy of our Gluten free menu please send a menu request to nebofunctions@gmail.com .

  5. Karen,, I found your blog while surfing the gluten free sites. I see you talk about Greenlife Groceery for your supplies. Did you know that there is another store on the east side of Chattanooga. It is called Village Market. It is located in Collegedale. They are a large natural foods store that has a BIG selection of gluten free foods. If you have not already, maybe you would want to check it out. Better prices that Greenlife also.

  6. Hi Karen,

I love your blog! I googled “gluten free english muffins” and I found you! I’m also a gluten free Sox fan. I’ve been GF for three years and I’ve learned a lot, but so far my baking has been from mixes. My kids gave me a stand mixer for my birthday so it’s time I started doing some real baking, and I think I’ll start with your Portuguese Sweet Bread.

Speaking of Sox fans, one of my daughters got married at Fenway last summer. Ceremony on the Third Base Deck and the reception was in the EMC Club, right over home plate. The food service was first class. The four star chefs produced two complete gluten-free menus for us and it was delicious. The two latest World Series trophies were honored guests! I am pretty sure there isn’t anything in the ballpark that would be gluten-free for Chris but there are many restaurants locally that have GF menus. I can list some if anyone wants them.

My kids have been terrific since my diagnosis. The first gift they gave me was a Cuisinart bread machine because it has a gluten-free setting. I use mixes and the breads are so much better than the ones available in the freezer section of the supermarket, although they do need refrigeration and have to be toasted before eating. For Yair Meyers, I think your Challah recipe will be too big for a bread machine. It would probably make four loaves.

Thanks for taking the time to read this. I’ll be back!

    • Marilyn, thanks for stopping by and commenting! That wedding at Fenway must have been incredible! I’m so glad it’s baseball season again (even if it is just spring training). I need to tweak that Purtuguese Sweet Bread recipe, but it’s still good as posted. Lately I’ve been making things a little easier on myself by using flour mixes such as Bob’s Red Mill All Purpose GF flour. Saves buying 5 different kinds of flour. A lot of the mixes really are good – and way better than the pre-made breads.

i see on your list cake and chocolate chip cookies. I have a 6 year old and after 8 recipes for white cake i have found a great one. The egg whites i believe do the trick.

Chocolate chip cookie recipe: I omitted the salt and white sugar, added 3 cups flour used crisco instead of butter and used bette hagmans flour recipe with 1 teaspoon of xanthan gum (per different suggestions). They are fantastic just like the real thing. I tried others and Alton Browns from the food network and they were flat and i didnt like the taste.

try them when you get a chance. Im going to try making your pastas thanks for the great info and photos.

    • Thanks for the suggestions! I’ll have to give that cake a try. We don’t eat a lot of sweets, but every once in a while, you just need a little something special.

  8. Dear Karen,

I was hoping to copy your gluten-free crawfish etouffe recipe, but cannot get my browser to do so. Could you please send it to my address above?

Thank you very much in advance,

    Muzzy

  9. Hello Karen,
    Your blog is lookin’ good.
When ever someone asks me about gluten free I send them your way, as your blog is really good.

I hope that you do not mind that I put a link to your blog over on my site.

    Keep up the great work,
    Joe

  10. Hi Karen,
I saw your post on English muffins, I noticed you said they where close to the real thing and I thought I would give them a try my way and see what happened. I was very pleased that they taste just like a gluten filled English muffin, even my husband and son who are not GF said they tasted just like the real thing so I thought I would share with you the change I made, for the flours just replace them with a total of 1 1/2 cups of Bette H. featherlight flour mix.
I used English muffin rings and got 3 out of one batch, tomorrow when I make more I will double the recipe, we love them toasted and used as a roll for cheeseburgers.
    Enjoy!

  11. Hi Karen,

My daughter recently has recently tested positive for celiac. I am looking for someone here in Chattanooga who teaches gluten-free cooking lessons. Do you know of anyone?

    Thanks!

    Paige

  12. Hi Karen,
I found your website through BeFreeForMe, and what a great site. Not to mention your a Red Sox fan! That is great. I’m looking forward to trying some of your recipes, especially the General Tso’s Chicken one. I really miss Chinese food…

  13. I would think so, but I’m not that knowledgable about bread machines. I do know that the woman I got the original (non-gluten free) recipe from makes it in a bread machine. Tosses everything in, sets the dough cycle, then takes it out and shapes it. Just make sure that after you shape it, you let it rise again before baking it. Good luck! and let me know how it works out.

  14. I was wondering if I can use your gluten free Challah recipe in a bread machine? What do you think?

  15. Marie – wow! you certainly have a lot to deal with all at once! You can always substitute sorghum or millet flour for rice flour. Can she eat millet flour? It’s gluten-free. I’ve discovered I like the flavor better than sorghum. As for subs for corn starch and potato starch (other than tapioca starch) I’m not too sure. I know a couple of other bloggers have detailed explainations of the different flours and starches and how they are used; I’d just have to get back to you on that.

You should also check out Karina’s blog – she has a lot of allergies, rather recently discovered (on top of known celiac). http://glutenfreegoddess.blogspot.com/
The internet really is a great resource for figuring all this out.
    –Karen

  16. Chris – When I went to Fenway , I tucked a couple of granola bars in my pocket. However, I recently got a message from Ellen over at Iamglutenfree.blogspot.com who said that she had a great meal at Burton’s grill, which is one block from Fenway. They apparently have a gluten free menu. I’d suggest eating first to be on the safe side. They do have things like ice cream and italian ice at the ball park, but I never try to eat a meal when I go to one. Hope that helps!

  17. Karen

Do you have any suggestions for GF eating at Fenway? I am new the to the celiac lifestyle and am heading to a game soon.

  18. Karen,

My dear daughter (8 yrs old) was recently found allergic to wheat, corn, soy, rice, oats, peanuts, buckwheat, barley, garlic, potato, many fruits and vegies, etc. I am thrilled to come across your website and plan to try the mushroom ravioli (she loved all pastas). I will try with sorghum flour and replace the cornstarch with tapioca flour. Can you also suggest how best to substitute white rice flour in your cranberry orange scones? How about substitutions in your english muffins?

I appreciate any help. Feeding my daughter is still quite a challenge (since this is new), plus finding foods my husband and two boys enjoy. I’m still at that overwhelmed stage. Thank you so much for sharing.

    Sincerely,

    Marie

  19. Ellen – I’m not sure about the angel food cake. I always thought they involved some flour. But I’m sure you could find a recipe for gluten free angel food cake if you google it.

As for buying stuff, if you have room to store things and can buy in bulk, Amazon has a grocery section that has a lot of gluten free food. Lots of people like to shop on Amazon. But you do have to buy in bulk. For flours and mixes, you can order right from Bob’s Red Mill’s website. If I think of anything else, I’ll let you know.

  20. Is angel food cake mixes naturally gluten free, I thought I read that somewhere.Where’s the best and cheapest place to order food that is gluten free?
    Ellen
