Turkey and Bean Chili
Ingredients:
2 tablespoons vegetable oil
1 small onion, chopped
Salt
Cayenne
1 package ground turkey (about 1 1/3 pounds)
2 teaspoons chili powder
1 teaspoon ground cumin
Crushed red pepper
1 teaspoon dried oregano
1 tablespoon chopped garlic
1 can tomato sauce
1 – 1 1/2 cups chicken stock (or water)
1 can dark red kidney beans
grated Monterey Jack or cheddar cheese

I admit, I was a little skeptical at the idea of a homemade English muffin. I mean, there must be some great secret to getting those neat little “nooks and crannies” in there. Turns out, it’s really not all that difficult after all.
