I’m always trying to find new side dishes to serve during the summer. Grilled vegetables or a simple salad are my standbys. We also eat a lot of potato salad. But as my cherry tomatoes are now ripe, this looked perfect. It is adapted from Food & Wine.

Cuban cuisine is a fusion of Spanish, African and Caribbean cuisines, and has absolutely nothing to do with Mexican cuisine.

I love lentils. My husband is less enamoured with them. However, he loves chorizo, so he managed to enjoy the combination. I made the dish with chicken breast, but I think it would have been better with the thighs that it called for. It would have created a depth a flavor that was slightly lacking.

I love enchiladas, but I always used to make them with flour tortillas because I hated working with corn tortillas. Maple Chicken Wings
Ingredients:
3-4 pounds chicken wings
1/3 cup teriyaki sauce (gf)
1/2 cup lite soy sauce (gf)
2 tablespoons minced garlic
1 tablespoon garlic powder
1 tablespoon onion powder
1/2 tablespoon black pepper
1 to 2 cups maple syrup
