The other night, we had the most fabulous pork roast for dinner. And while I made it, I really can’t take the credit for how wonderful it was. This recipe came from Shauna (Gluten-Free Girl) and Danny (her Gluten Free Chef). You can find the recipe here on their new website Pork, Knife & Spoon. I had seen her recipe, and then when I was at our local market, I saw that they now make their own all natural sausage. This includes chorizo. So clearly, I had to make this for dinner! Shauna served it with a ginger lime marmalade over the top. I decided to mix it up a little, and made a sauce from apricot jam, a tiny dash of sherry and a tiny dash of soy sauce. Sounds strange, I admit, but it worked very well with the pork.
This would be the perfect entree for dinner party. It was actually quite easy to make (although my butterflying technique needs work), but looks, and tastes, darned impressive!
