Menu Plan Monday, Oct. 6, 2008

I need to get back to organizing my menus since my life has gotten so busy.  Gluten Free Goodness is hosting this week, and the ingredient is pears.  I don’t have any pears, just apples.  So I’m a week behind. 

Gluten Free Menu Swap Monday

I made Beef Wellington for dinner tonight.  It almost worked really well.  The pastry was close, but not perfect.  It’s a puff pastry, and I’d never attempted that before.  I think it has great potential, as the whole thing tasted really good.  I’ll post about it soon.

Monday:
Chicken Stir Fry
(maybe General Tso’s)
Rice

Tuesday:
Out to Dinner

Wednesday:
Chili
Corn muffins

Thursday:
Leftovers before practice

Friday:
Salmon
Potatoes
Salad

 

I also need to start planning lunches better.  I have some leftover soup in the freezer, and after Wednesday, will have some extra chili.  For that matter, I’m apt to have leftover stir fry too.  Basically, I haven’t been eating well because I haven’t been planning ahead.  That leaves me not feeling well.  I need to remember to make my food/health a priority.

    Before going gf, I used to make a grilled cheese Wellington with sauteed portabello mushrooms, grilled onions, wilted spinach and a couple of kinds of cheese on sourdough bread. I think I could pull it off with gf bread . . .

  2. Dang, girl, that looks good. I think you could also use the simpler version of the GF Crescent Roll dough for that, too, and it would be pretty close.

  3. Angela – See my post on the Wellington. I can’t take credit for the puff pastry, but I think Kate’s recipe for croissants produces a dough that is pretty darn close!

    And I hope you like the General Tso’s chicken – it’s my favorite Chinese food.

    I am bookmarking the General Tso’s. It’s my husband’s favorite from the takeout place near us, and it would be great to all be able to have it. Yummy!
