Gluten Free Menu Swap Monday

This week’s Menu-Swap is being hosted by Asparagus Thin (where you can find a round-up of all the week’s menus). The ingredient of the week is onions. I never used to like onions and would pick them out of my food. Then I started to cook with them a little more, but never featured them, a certainly never ate them raw. Now, I like red onions in my salad, and like sauteed onions in all kinds of things. (My mother would be so proud.)

My menu for the week is a bit “meat and potatoes.”  Nothing too exciting.  The jambalaya only sounds fancy.  It’s actually really quick and easy to make.

Sunday:
Grilled Salmon with Maple/Soy Glaze (Food & Wine Magazine)
Mashed Potatoes
Peas
[This was a really nice glaze for the salmon. I didn't marinate the fish for as long as the recipe called for, but it didn't seem to matter. The flavor did not over-power the fish, which I think a lot of sauces tend to do.]

Monday:
Burgers with Caramelized Onions and Blue Cheese (GF, of course)
Fries
[It's only Monday and I've already deviated from my menu -- but it's not my fault, it's the weather. We had a bad storm, so no grilling. I was going to make my jambalaya, but Husband opted for risotto instead (same idea, different ethnicity). I made it using the smoked sausage I had for the jambalaya, plus mushrooms and peas. I'll make burgers Wednesday, weather permitting.]

Tuesday:
Out to dinner

Wednesday:
Jambalaya
[It finally stopped raining, so we got to grill those burgers. A nice easy meal.]

Thursday:
Grilled Steak
Potato/Root Vegetable Gratin (if this works out, I’ll post it – right now, it’s just an idea in my head)
Salad

Friday:
I can’t plan this far ahead. Maybe pizza, maybe something on the grill.
We are heading to our friends’ house for a cookout – “chicken on a stick” (kabobs) with various dipping sauces
 

I’ve been experimenting with baking bread.  I made challah the other day, and it was close to right.  I’m going to try it again with a few alterations.  Hopefully that will be better and I can post that too.
