Sea at Book of Yum started an event called Adopt A Gluten Free Blogger as a way for people to discover all the great gluten-free blogs out there and try new recipes.
This month, the event is being hosted by Thomas at The Gluten Free/Casein Free Diet Experience. Sometime after June 9, he will have a “roundup” of all the different posts. So be sure to check it out.
This month, I chose to adopt Kate at Gluten Free Gobsmacked. I had originally intended to make her croissants, but I did not have the time. However, as I have about half her site bookmarked to try, I did not have any trouble coming up with another idea. I decided to try making her “mock lavash bread” or as she also refers to it, “gluten-free sandwich wrap Take 3.”
I thought it might be difficult to make a wrap bread, but it was actually one of the easiest breads that I’ve made. (Way to go Kate!) And one of the tastiest! (Again, way to go Kate!) The only thing I changed on the recipe was to cut back on the amount of “optional” spice that goes into it. I added a little, but not much. The best thing about making it is that everything more or less goes in the mixer at once. No waiting for the yeast to proof or dough to rise. The only remotely hard part was spreading it out thin enough, but even that wasn’t bad.
It’s was great for lunch today and I plan to have another sandwich for dinner (to be eaten on the plane flying to vacation – yeah!) And as you can see below, it even worked well as a breakfast “burrito.”

M-Elle – I had no trouble taking my sandwich. (I was on US Air flying domestic in the US.) They didn’t even question it. And I packed sandwiches on my return flight out of Boston, and they didn’t question me either. I just had them in my carry-on. Within the US, the only restrictions relating to food are on liquids and gels (or anything similar like jellos, pudding, etc.). Any type of solid food, like a sandwich, should be fine. Flying international, there are some restrictions on what you can take into certain countries, and that varies. For examples, I couldn’t bring certain dried fruits into Australia. It was okay on the plane, I just had to toss the rest at the airport when I got there.
I’m just wondering if you had any problems taking your wrap on the plane. The Canadian airport security wouldn’t let my mom take a GF sandwich with her on the plane because she didn’t have anything identifying her as a celiac.
that’s such a great idea to use it for a breakfast wrap–my DH and I are South Beaching it for awhile, and this has enough whole grain in it that I thought I’d try it. It is fantastic(maybe my carb-deprived tastebuds are just super-thankful too). If you’ve ever been to wolfgang pucks restaurant there’s a Caeser Salad and on the bottom there is a grilled flatbread like this. IT’s amazing to say the least–and now I’m able to recreate it. It’s so easy-flatbread, lettuce, caeser dressing, cheese and chicken-can’t go wrong!
I’ve made Kate’s lavash bread too! It is amazing and so simple. I love your photos of it; it looks perfect! Now I’m craving a wrap… good thing it’s lunchtime
that looks SOOOOOOO good!!!!! Oh… how I wish I had some of that wrap bread!! *sigh* I will have make some soon! I need to stock up on supplies so I’m ready to go!!

I’m glad the recipe was an easy one to recreate – it sure gets a lot of use around here! I think it has replaced most of my bread baking because of how easy and tasty it is.
