Menu-Plan Monday, March 31

This is the cabin in Montebello, Virginia, where I spent Easter with my Mom and two sisters.  Isn’t it cute?  It’s main part was built 170 years ago.  A kitchen and bath were added to the back, giving one all the modern conveniences.  (Although the only heat is from the wood stove, and it did get a little chilly at night.)  We did a bit of hiking in Natural Bridge, VA, and also took in the sights along the Blue Ridge Parkway.  I spent three years living in Lexington, VA (for law school), and find this part of the country to be quite beautiful and peaceful.

This week’s menu swap is hosted by Gluten Free Mommy, and the ingredient of the week is lemon.  I’ve discovered that our local whole food store carries local, grass-fed beef, and I’m looking forward to trying it.  I think the same farm also supplies them with pork and chicken.

Monday:
Feta-topped Chicken with Veggies
(I never got to that last week)

Tuesday:
Out to Dinner

Wednesday:
Lemony Shrimp Salad
with Tomato, Avocado and Bacon

Thursday:
Greek Rigatoni
(Pasta with Feta, Sun-dried Tomatoes, and Olives)

Friday:
Chicken Parmesan
Carrie’s Lemon Butter Chicken
Gnocchi, Veggie (of some kind)

Saturday:
Grilled Steak (local and grass-fed)
Baked Sweet Potato, Salad

  

And the most important this happening this week is that the Sox start the season – again.  They are playing the A’s up in Oakland on April 1; Matzusaka for the Sox, Blanton for the A’s.  Then on the 2nd, Lester and Harden.  GO SOX!!!

  1. Did you see the game at The Coliseum? I found out about it as it was starting. I could have been there. How depressing is that? lol

    I like the pics from your Easter vacation. I’ll have to put Natural Bridge down on my list of “must see” places.

  2. Karen! I’m flattered you are having the chicken this week! We had it tonight! It was yummy, but boy I forgot how RICH it is!! You might want to use a little less butter than it calls for! But if you love “rich” then go full throttle! It’s good stuff!! Michael even said he really liked it tonight (which is wierd because the last time I made it he hardly touched it! lol I guess his tastes are changing! lol

  3. Ginger (of the North) – Thanks! Unfortunately, we don’t have Whole Foods here, just a nice “whole food” healthy store. So while they have a good selection of gf food, it isn’t great. Although now that you mention it, I should check their freezer section.
    I love lamb and more “gamey” types of meat, so I imagine that grass fed beef will be something we’ll like a lot. The cows are raised right here in TN (not sure the variety, though). I wanted to sign up for the CSA from that farm since they deliver here to town, but I was too late.

  4. Great looking menu! Just so you know, Whole Foods sometimes has GF gnocchi in their pasta refrigerator section, in case you don’t feel like making it from scratch. I buy it whenever I am there and toss it in the freezer.
    We have been using grass fed beef since December and find it to be great. Ours is a Beltie variety and I think has some similarities to lamb when it comes to the flavor of the fat. The stock is going to take more adapting to, as it really has quite a different (grassy lamby) flavor than corn fed beef stock. Beautiful photos!

  6. Wow… Karen, I had no idea that’s where you were going! I grew up about 30 minutes from there! I went to Natural Bridge all the time!! How funny!! I’m glad you had such a good time!!
