
HAPPY ST. PATRICK’S DAY!
This week’s menu-swap is being hosted by Sea at Book of Yum. She always has wonderful looking menus. I’m not sure I’ll be able to stick to mine well – I’m going away for the weekend, so I’ll be trying to get organized for that. Because of that, I’m going to wait to use this week’s ingredient — coconut — until next week. I found a really good dessert recipe that I want to try, but I don’t have time this week.

I’ll also be making English Muffins and some sort of sandwich bread to take with me on my trip. My Mom, sisters and I have rented a cabin in Virginia for the weekend. It has a full kitchen, thankfully. And a jacuzzi.
