I’ve been having trouble sticking to my menus. Maybe I’ll do better this week. I’ve at least already got one day right - yesterday!
This week’s menu swap is being hosted by Conviviality, and the ingredient is cauliflower. That’s one of those vegetables that I try to avoid, but maybe someone can inspire me with a fabulous looking recipe. Anyone? Anyone?

Here’s my weekly menu, minus the cauliflower:
Sunday
Baked Eggs with Chorizo and Potatoes
(recipe from Food & Wine, Dec. 2007)
Monday
Seared Tuna
Natalie’s Coconut Rice
Vegetable of some kind
Tuesday
Out to Dinner
Wednesday
Chicken Cacciatore
(Recipe from Everyday Italian)
Mashed Potatoes
Thursday
Jambalaya with
Shrimp and Andouille Sausage
(I’ll post this recipe later in the week - it’s really easy)
Friday
Probably Leftovers
By the way, spring training games have started! Yeah! That means spring is just around the corner! (and it means cute baseball players) :)
