Welcome to this week’s Menu-Swap! I’m hosting! This always reminds me of “Iron Chef,” which is one of my favorite shows. They begin by pondering what succulent variations the chefs will create with the “secret ingredient.”
This week’s secret, or not-so-secret ingredient is butternut squash. (It will be a secret to my husband who doesn’t like it, but I’m going to try to sneak it into this week’s menu anyway.)
So, gluten-free bloggers, with an open heart and an empty stomach, I say unto you in the words of the Chairman: ”Allez Cuisine!” (That roughly means, “go and cook!”)

Sally at Aprovechar is focusing her meal plan to fight anemia (unfortunately anemia is rather common for people with celiac disease). Her menu looks delicious, including Swedish Meatballs, Spaghetti Sqash Casserole, and a falafel, tahini and cucumber salad. Yum!
The Gluti Girls have included some mouth-watering photos on their menu page. (No fair – now I’m hungry!). Their week’s menu looks equally tasty, with “Cheater Vegetable Beef Soup” (recipe included), Baked Chicken with Roast Squash, and Chicken Fajitas. Also included is a recipe for Bette Hagman’s Mary G’s Biscuit Mix.
Carrie from Ginger Lemon Girl had a great meal at Carrabba’s and seems to be carrying over the Italian theme into this week’s menu. Was that intentional? She has on her menu a Tuscan Potato, Kale and Sausage Soup (recipe, please) and her Dad’s famous Caesar Salad, as well as a Pizza on Friday. She is also featuring a Grilled Salmon with Caribbean Jerk Seasoning. Sounds really good! And be sure to check her site later this week for February’s “Gluten Free Grill” which will feature an interview with yours truly.
Kara from Gluten-Free in the Greens has a wonderful looking menu with an international flair. She starts with Indian-style mashed sweet potatoes and curried lentil-carrot salad on Monday, followed by Pumpkin-Chicken Enchiladas on Tuesday (and Wednesday) (those sound fabulous, by the way). She also has on the menu “Mezza” which is a Mediterranean/Lebanese style grill, and then a Red Lentil Soup. And stayed tuned, because she plans on learning to make her own yogurt as well as a yogurt cheese.
GlutenFree Dance is sporting a new look to her website and very cute Red Sox Smiley Face. (Go SOX!) But getting back to food, she is starting the week with Pizza, then will be making Beef Stroganoff and Tamale Casserole later in the week. Sounds good! (And just because you missed posting something chocolate last week, doesn’t mean you can’t have chocolate this week! lol!)
Fresh Ginger starts her menu with a for the week – this week it is Ginger Lemon Fizz. I think we’ll all go to her house this week! And her food looks just as good as the drink: Roast Chicken, Spinach and Ricotta Stuffed Cannelloni, Chicken Pot Pie, Leek and Cheese Soup, and Lamb Curry. Wow!
Welcome to Rachel and her Gaggle of Girls Gluten-Free Family! Her menu is full of warming meals for those cold winter nights. (It is still winter in some parts of the country!) She includes Chicken Tetrazinni, Crock Pot Pork Curry, a Black Bean, Sweet Potato and Pork Stew, and Indian-inspired Saffron Lentils, Rice and Pork. That all sounds great, and welcome aboard!
Sea at Book of Yum has her menu up now, and it is full of its usual international, vegetarian delights. She has Italian – Pasta; Japanese – Yuba soybean skins, Soba Noodles in broth, and Sesame spinach; Mexican – corn pupusa with re-fried pinto beans; and then Vegan Southern Fried Tofu with Mashed Cauliflower.
Natalie, aka Gluten Free Mommy, also has her menu up. She has a great looking menu, with Sweet and Sour Meatloaf, Sweet Potato and Black Bean Enchiladas, Baked Potato Soup, and Mahi Mahi Tacos. She sounds like she’s been busy chasing after that little one of hers!
Cris at Red Dirt Girl is making good use of her Slow Cooker cookbook this week, with recipes for Lime Chicken Tacos and Butternut Squash Soup. She also has planned a Quinoa Soup with Lamb. Sounds really tasty! And stayed tuned, because she is promising to post a recipe for oatmeal raisin cookies.

Hey Karen, I loved your interview over at Carrie’s blog — we have the exact same GF anniversary! Mine was also May 20 — the last piece of gluten I ate was on that Saturday (the 19th). I had a piece of graduation cake at a party.
Wish I were coordinated enough (and cooked enough in the week) to do the menu swap. I am going to try your kung pao chicken, for sure!

mmm – roast duck! yum. I haven’t tried cooking duck yet. My goal for today is to make a dairy and gluten free version of spinach-artichoke dip.

Rachel – no worries if you don’t use the ingredient; or if you don’t stick to your menu. We have a hard time playing by the rules.
YUM! Whoaaa.. I’ve never had roast duck (well maybe on a chinese buffet one time) but never at home… I wish I could come over!!! You have a great menu!!
Carrie – I don’t cook it often because it tends to make a mess of the oven. But my husband and I both love it and I found a new recipe that I wanted to try. What will be more difficult is trying to figure out hos to make gnocchi.
