Smoked Trout Pizza
First, I used my home made pizza crust that I have been making for a while. I have it posted here. I now use a combination of brown and white rice flours instead of all white rice flour. I think it gives it a better, less sweet taste.
Once the crust was partially cooked, I spread on the sauce. I used a white sauce made of olive oil, crushed garlic and basil. Actually, I did not have any fresh basil, so I added in a little pesto I had in the freezer.
I topped that with slices of fresh mozzarella, slices of smoked trout (smoked salmon would be very nice too), and green onion.
I baked that on my pizza stone at 400 degrees for about 8 minutes.
It was very garlicy, but that balanced the smoke flavor from the fish nicely. And I like garlic.

I will be submitting my menu in a bit, but first I have to say, that is the best looking GF pizza I have seen yet and even I have made about 12 different ones. I can’t wait to try that crust.
Thanks Ginger! I actually do better at making a gf crust than I ever did making a “regular” one. It only makes a thin crust, but I like those, so not a problem. — Karen

That looks delicious! Where do you buy smoked trout? I’ve only seen smoked salmon in the grocery stores I shop at (of course the piggly wiggly never did have much of a selection! haha!)
Carrie – alas, there was not any left over. (surprising, huh?) I found the trout at “Greenlife Grocery” which is our local health food store. Actually, they have a branch in Asheville, NC. Smoked salmon would be really good on the pizza too. — Karen
