I promised to get back to menu-planning this week – it really will help me be a little more organized. Natalie, aka Gluten Free Mommy, is hosting this week, and the ingredient of the week is Leeks. I’ve been wanting to attempt a potato and leek soup, so this seems like a good week for it.

Karen — LOL I bet it was fabulous girl!! I really don’t think there is a way to mess up roasted chicken! Even if it’s not as crispy as you like it’s still delicious!! I can’t wait to see your pot pie recipe! I bet that will be amazing!! I’m glad you are back and posting! I missed you!
Carrie – I’m such an idiot – somehow I managed to roast the chicken upside down, so the skin was crsipy on the wrong side. lol! It at least tasted good. And now I have left overs to attempt a chickn pot pie.
I want to know how that roasted chicken turns out Karen!! Yummy menu!! I’m gonna do a post next week on “how to roast a chicken” in your honor!!
