Carrie (aka Ginger Lemon Girl) was right, the Baked Parmesan Flounder really is “Impressive. Easy. Delicious.” I had to settle for frozen flounder instead of fresh as I live a bit too far from either coast. But I took Carrie’s advice and made sure to thoroughly defrost and dry the fillets before adding the topping. (Otherwise the topping will slide off the fillets when baking.)
The side you see there is a black bean, corn, and red bell pepper salad.
